Pumpkin Brownies with Chocolate Frosting (no bake)

These delicious no-bake brownies satisfy any sweet tooth and are rich and delicious.


Prep Notes

You will need a food processor or quality mixer to create this recipe.


Ingredients


Brownies

  • 1 1/2 cup pecans (or nut of choice, i.e., walnut, etc.)

  • 30 pitted dates, fresh

  • 3/4 cup canned pumpkin

  • 1 1/2 tsp pumpkin pie spice

Frosting

  • 1/2 cup cocoa powder

  • 1 avocado

  • 3/4 cup organic honey

Directions

  1. If the dates are not pitted, pit the dates, by cutting them in half lengthwise and pulling out and discarding the pit.

  2. Combine all brownie ingredients in your food processor until it forms a ball.

  3. Scrape out brownie mix and press into a glass 8" square pan.

  4. Add frosting ingredients to food processor and mix until smooth.

  5. Scrape out frosting and spread over pumpkin brownies.

Eat fresh and store leftovers (if there are any!).


There are no preservatives in these brownies, so be sure to refrigerate the leftovers so they do not spoil!.


Notes


I love to use Dates in recipes. They are sweet and delicious and add good texture. Don't forget there are pits inside dates. Buy the dates that are featured in the produce department. Once they are dried and packaged and in the aisles of the store, they have lost a lot of their nutritional benefit.


If you cannot eat or do not like canned pumpkin, consider buying and baking your own pumpkin. Baking pumpkins are smaller and you cook them like a squash in the oven.


If you cannot have or do not like pumpkin pie spices (cinnamon, ginger, nutmeg, clove), leave one or all of them out! I promise it'll still taste delicious.
