Eggplant "Pizza" 

Need a healthier alternative to satisfy your pizza craving? Try this!


Ingredients

Eggplant

Olive Oil

Italian Seasoning

Spaghetti or Pizza Sauce

Mozzarella Cheese (Challenge yourself to try a cheese that is not Cow's Dairy, like Goat -- there is Goat Mozzarella! -- or dairy free like Daiya brand)


Directions

  1. Preheat oven to 350 Degrees.

  2. Slice Eggplant into rounds and fit onto a cookie sheet.

  3. Drizzle olive oil over eggplant rounds.

  4. Sprinkle with Italian seasoning.

  5. Bake for 10 minutes.

  6. Remove from oven.

  7. Spoon (about 1 tablespoon per) spaghetti or pizza sauce onto eggplant rounds.

  8. Lightly sprinkle with cheese.

  9. Bake another 10 minutes or until cheese is melted.
