Gluten Free Graham Crackers
Packaged "gluten free" products are generally loaded with other "stuff" you also don't want to eat. Food manufacturers put in lots of sugar and additives to make up for the lack of gluten. Additionally, gluten free graham crackers contain milk and eggs, which can be an issue for anyone who has a sensitivity to those foods.
For this recipe you will need:
A food processor
A 12x17 cookie sheet
A pastry roller
A pizza cutter
2 cups brown rice flour
2 Tbsp cornstarch
5 Tbsp brown sugar
1 tsp baking powder
Sprinkle of salt
5 Tbsp butter (use Earth Balance, if dairy free; I recommend the soy free version)
6 Tbsp milk (suggest Vanilla Coconut milk, if dairy free)
3 Tbsp honey
Food process all dry ingredients to mix well.
Add other ingredients and mix well
Cover cookie sheet with parchment paper.
Evenly roll out the dough onto the parchment paper on the cookie sheet. (I suggest you use a grape seed oil sprayed pastry roller to do so).
Refrigerate 10 minutes.
Cut into squares with pizza cutter.
Poke holes in the squares with fork.
Bake at 350F for 9 minutes.
Rotate pan (front to back) and bake for another 9 minutes.
Remove from oven & let cool.
Please note, these get crunchier as they cool.
Store in an airtight container or freeze.
