Preheat oven to 350 Degrees.
Slice Eggplant into rounds and fit onto a cookie sheet.
Drizzle olive oil over eggplant rounds.
Sprinkle with Italian seasoning.
Bake for 10 minutes.
Remove from oven.
Spoon (about 1 tablespoon per) spaghetti or pizza sauce onto eggplant rounds.
Lightly sprinkle with cheese.
Bake another 10 minutes or until cheese is melted.
